Cooking & Holding Ovens

The “halo heat” cooking and holding method:
The cooking chamber is encircled with a cable style electric
thermal element, creating a halo of radiant heat that surrounds the food with uniform temperature.

  • Reduces product shrinkage which increases yield, retains moisture, protein, vitamins and minerals.
  • Permits maximum enzyme action to tenderize meat.
  • Better consistency, flavor and increased holding life.
  • Low total energy consumption, no fans, no outside venting required, cooks safely with 95% to 100% humidity level without adding water.

Oven Controls: Dial type cook thermostat with temperature range from 100° to 325° Fahrenheit. Dial type hold thermostat with temperature range from 60° to 200° F. 12 hour cooking timer.
Construction: Interior and exterior are stainless steel except for the 1000-TH-I/STD which has a stucco aluminum exterior and 2 stainless steel doors. Stainless steel shelves hold 18” x 26” pans.
